You can leave them in the warm water to ensure that they cook evenly. While the noodles are cooking, you will need to prepare the pancit soup. To do this, you will chop up the onions and tomatoes and fry them in oil. I like to do this in a wok so that I can use a spatula. After the onions and tomatoes have been chopped, they will go into a bowl of cold water. This prevents them from browning. Once the onions and tomatoes are fried, you will need to drain them and add them to the stock. Finally, you will add the pancit sauce and lime juice to the soup. I like to use a ratio of 2 parts sugar to 1 part vinegar. After everything has been added to the soup, you will need to mix it all well.
