Frozen fish should not be thawed out and then refrozen. When thawing out, the fish will be very mushy. When refreezing, the fish will only take a few hours to freeze back down to -3 degrees Fahrenheit.

How Long Do You Freeze Salmon?
When freezing your fish, the general rule is to place your fish in a freezer between -17 and -20 degrees C. If you follow this rule, your salmon should remain frozen without ice crystals appearing inside the fish. This allows the salmon to maintain the delicate flavor and texture of the fish. You can also freeze salmon in an ice bath to keep the water freezing. You need to let the salmon thaw in the refrigerator and then eat the fish.

Before you can freeze salmon, you must thaw it first. To do this, place your salmon in cold water and place a frozen ice pack on top of it. This helps the fish maintain the correct temperature. After about five hours, you can drain the water from the ice pack and put it in the freezer. If you don’t drain the water, it will freeze into a ball that is difficult to use. After you have frozen your salmon, you must thaw it before you can eat it. This is typically done by placing the ice pack back into the cold water. This takes about four hours.
