Use your imagination when it comes to this recipe and mix and match the ingredients to your liking. This chicken salad is perfect for a casual meal at the picnic table or for a special occasion.
What Should I Use Instead of Peanut Sauce?
You probably love pecan chicken salad, but you know, it isn’t very healthy. It’s loaded with extra fat and refined sugars. I suggest that you try this healthy recipe instead. I have used peanut sauce, but you can use another sauce, such as bbq sauce. These two are shown below. You can also use no-salt ranch dressing if you want a healthier dressing. What You Need
1 Tbsp apple cider vinegar
1 Tbsp honey
1 Tbsp chopped pecans
1 Tbsp minced fresh parsley
1/2 Tbsp minced fresh dill
1/2 Tbsp kosher salt
1/4 tsp pepper
1 Tbsp olive oil
1 chicken breast
1 cup spinach
1 package macaroni

[Text]: 4 large boneless, skinless chicken breasts
[Text]: 1 can of peaches
[Text]: 1 small can of cream
[Text]: 1 1/2 cups shredded cheddar cheese
[Text]: 1 1/2 cups plain bread crumbs
[Text]: 3 tablespoons mayonnaise
[Text]: 1/2 teaspoon salt
[Text]: 1/4 teaspoon garlic powder
[Text]: 1/2 teaspoon black pepper
[Text]: 2 slices pumpernickel bread
[Text]: 1/2 cup pecans, toasted and chopped
[Text]: 1/2 cup grape tomatoes, halved
[Text]: 1/2 cup mayonnaise
[Text]: 1 tablespoon ketchup
[Text]: 3 tablespoons salad dressing
[Text]: 3 tablespoons shredded Swiss cheese
[Text]: Mix all ingredients but the chicken, tomatoes and bread in a large bowl. Cut the chicken into strips and place into the bowl. Combine all the topping ingredients and sprinkle on the chicken. Toss to coat chicken. Put chicken on top of bread slices and sprinkle with tomatoes. Bake at 450 degrees for 20 minutes or until chicken is done.
