How To Make Moroccan Chicken

Ever wondered how to make Moroccan chicken? Now you have the chance to try Moroccan chicken at its best! Ingredients: 2 chicken breasts, chopped chicken thighs and wings 1 tbsp. harissa 2 garlic cloves, pressed ½ red bell pepper, chopped 4 tbsp. of finely chopped cilantro 1 tsp. salt 2 tsp. ground coriander 1 tsp. of ground cinnamon 1 tsp. crushed red pepper flakes 1 tsp. ground cumin 1/4 tsp. saffron ½ cup olive oil 4 eggplants, sliced Salt and pepper to taste 1 large sweet potato, boiled, peeled and cut into cubes In a bowl, combine the oil, harissa, garlic, bell pepper, cilantro, cumin, salt and red pepper flakes. Add the chicken. Add salt and pepper to taste. Combine all the ingredients. Let it marinate in the fridge for about 2-3 hours. Preheat the oven to 180 degrees C. Prepare the eggplant and sweet potato in the same way. Arrange the eggplant and sweet potato cubes on a baking sheet, and roast for 20 minutes. While they’re roasting, carefully cut the chicken and place it in an oven-proof skillet with the marinade. Bake for 20-25 minutes or until done. Heat oil in a frying pan and saute the eggplant and sweet potato. Combine all the ingredients and serve.
