Garlic Roasted Veggies

This is a wonderfully simple recipe. That is, provided you have a slow cooker. Using a slow cooker means you don’t have to pre-heat the oven or worry about the oven being on in the middle of the night. You can just pop your ingredients into the cooker and leave the house. Once you’ve put everything into the cooker, you can go about your day, knowing that your veggies will be done by the time you get home. This recipe makes enough to feed a family of four. Feel free to add more veggies if you like. You can add more vegetables, including tomatoes, green beans, onions, or peppers. But you can’t use chicken here. If you don’t have a slow cooker, you can easily make this recipe in the oven. You will have to pre-heat the oven for the first hour. This will allow the broccoli and carrots to soften a bit so they cook better. When you’re finished, you’ll have a delicious meal you can enjoy while watching TV.
