Where did the eggplant come from?

The first variety of eggplant, the American Eggplant, was developed in Japan in the 1800s. By the early 20th century, it was becoming more popular. The eggplant wasn’t widely popularized as a vegetable until the 1940s. Today, the eggplant is widely used as a vegetable in the United States. It can be enjoyed roasted, grilled, in salads, and even used in soups and stews.
Edible vs. Inedible
When it comes to vegetables, it’s best to think of them in a similar way as fruit. While they’re a part of the plant kingdom, they have a softer, more pulpy texture and are often sweet. The term “vegetable” itself can be a little confusing when it comes to vegetables because they can sometimes be a fruit as well. To qualify as a fruit, an item must have an outer rind. As for vegetables, they have no outer rind. However, both fruits and vegetables contain compounds that are beneficial to our health. Although you can still eat them raw, cooking them makes them more easily digestible. A number of fruits and vegetables contain compounds that have been shown to help lower blood pressure, cholesterol and blood sugar. Examples of these include onions, garlic and green onions.
