Thank you. -Sharon paraphrasing: green leaves are the best vegetable to eat. There are many varieties of green leafy vegetables available in supermarkets. Many people prefer to grow their own greens. However, there aren’t many types of greens that grow well in temperate climates. Most greens grown in warm climates are bitter and tough. Some greens are edible, such as kale, collards, mustard greens, turnip greens and arugula. Others are not, including cabbage, cauliflower, broccoli, brussels sprouts, Brussels sprout, kale chips, kohlrabi, radicchio, rutabaga, spinach, Swiss chard, watercress, etc. Here are some of our favorite greens: Kale is the perfect green for summer. Its crisp texture and mild flavor make it a perfect addition to salads, sandwiches, soufflés, pasta, pizza, or even as an ingredient in stir fries. Kale has a mild, almost bland taste, so it pairs well with many foods. A great way to enjoy kale is to steam it and toss it with pasta or rice, which will add crunch and flavor. Another great use for kale stems is in salads. Simply cut the stems off and rinse them under cold water, drain, squeeze out excess water and chop. Combine with other greens like spinach or arame, chopped, tossed with vinaigrette, grilled or sautéed, topped with feta cheese, roasted or baked, served with roasted vegetables, eggs, potatoes, meat, fish, grains, bread, fruit, yogurt, cheese or nuts. Serve as the base for many dishes. We love kale in our stir fry, especially with chicken. Make a quick and easy stir fried kale salad with ponzu sauce. Ponzuu sauce is an Asian condiment that adds a fresh taste to any dish, whether it be a stir fry, salad, soup, curry, noodle dish or simply a simple salad. Pair it generously with any greens you choose. Sprinkle with sesame seeds, peanuts, poppy seeds or sunflower seeds. Garnish with chopped scallions and cilantro. Recipe: http//www… Arugula is another great green to add onto salads and sandwiches. Unlike kale or collard greens however, arundulae are much more tender and less bitter. Arundula leaves can also easily be used in place of kale. Look for arundo leaves that contain no bitter taste. Their flavor is milder than kale and they are often used as garnish in many recipes. Like kale we love arunculas in salad dressings, sauces, dips, spreads, marinades, dress ins, pestos, hummus, wraps, appetizers, pastas, pizzas and even in desserts.
