Here’s what you do: You cut off all the sides of your zuchini and put them in there. Then you put the grating side on top of that and squeeze it out. And then when you get to putting the next zucca in, you just put that on there and press it down. So you’re basically just squeezing it right onto the grate. That’s why it looks like it isn’t even going to fit. But it will. Now you’ve got a nice little pile ready to go into the oven. Just keep in mind that it takes a little bit longer to cook than regular zuccinis. If you want to bake it faster, just slice it lengthwise and roast it.

I recommend pealing if needed. Zucchinis are best when young and small. They are easiest to peel once they’ve grown out of their seed clusters. If you want to get really fancy, you could even slice them in half and make zucca. You’ll have a whole new world of zuccotti! The zukes are easy to grow, though they do take a bit of time to mature. When they reach about 6 inches long, I start to harvest them.
Do you grate the whole zucchini for bread?
To me, zuchini melts right into bread. I do not want those pieces to be there. They are too small. But I think they are necessary to give the loaf that extra moistness. If you peel them off, you will get a dry loaf. You can grate them instead. That gives you a little more moisture. And you get all the nutrients in this vegetable. So I would say that it works really well. There is no reason to peel it unless you are going to eat the whole piece. Then you might want something else. For me personally, grating is what I like to do. When I am eating a piece of bread with zucca, my hands are always greasy. This is why I prefer grated zuccinis.
