Ingredients are as follows: 2.5 kilos of yellow split green potatoes, 1 kg of paneer or roti, 1 kg of skinned tomatoes, 1.5 litres of water, 1.5 kilos of fresh ginger, 10 garlic pods, 2 tbsp of green chilli, 2 eggs, 25 grams of turmeric powder, 3 tsp of mustard seeds, 3 tsp of fenugreek, 3 tsp of asafetida, 2 tsp of black mustard, 3 tbsp of refined oil, 2 tsp of cumin powder, 1 tbsp of coriander powder, and 1/2 kg of onions, chopped. 1. Peel and cut the potatoes into large pieces. 2. Heat the oil in a wide saucepan and add the ginger and garlic. Let them cook for 3-4 minutes. 3. Add the onion and fry on medium heat for 3 minutes. 4. Add the black mustard seeds and mustard powder. Let them cook for about 30 seconds. 5. Add the tomato, fenugreek, turmeric, cumin and coriander powder. Mix well. 6. Pour the water in the saucepan and let it boil. 7. Add the potatoes and cook them on medium heat for about 10-15 minutes. 8. Remove the potatoes from the saucepan and set aside. 9.
