Ingredients: – chicken – carrots – onions – garlic – salt & pepper – apple cider vinegar – butter – dijon – Parmesan cheese Directions: – spray a non stick skillet with oil – wipe out – spray skillet with oil and heat over medium heat – slice chicken breasts into 1/2 inch strips – dip the chicken into the apple cider vinegar – season with salt and pepper – place chicken in pan – cook for about 5 minutes per side until chicken is cooked through – remove from pan and set aside – place carrots and onions in pan and cook over medium heat for 3-5 minutes until carrots are soft – remove and set aside – melt butter in pan – return pan to stove – place chicken back into pan – cook for an additional 3-5 minutes until chicken is cooked through and crispy on the outside – remove and set aside – place garlic in pan and cook for 1-2 minutes until garlic is soft – remove and set aside – melt 2 tablespoons of butter in pan – pour into bowl – add Parmesan cheese – stir with a wooden spoon – pour into pan – return pan to heat – heat for another minute or so and then remove from heat and place on paper towels to cool – serve with applesauce
