•1/4 cup sugar
•1/2 cup toasted, coarsely chopped pistachio nuts
•1/4 cup olive oil
•1 tsp. baking powder
•1/4 tsp. salt
•1/2 cup milk
•1/4 cup olive oil
Note: You may need to add a few more egg yolks.
Preheat oven to 325 degrees F. Grease a 9” x 13” baking dish and line the bottom of the pan with parchment paper.
Add the flour, sugar, pistachio nuts, and salt to a large bowl. Beat the egg and 1/2 cup olive oil together in a medium bowl.
Pour the mixture over the flour mixture and stir to combine.
Pour the batter into the prepared pan and bake for 35-40 minutes, or until a cake tester inserted into the center of the cake comes out clean. Let the cake cool completely.
