During the conference, a speaker gave a presentation on how to use natural ingredients in your baking creations. As I listened to him, he mentioned that he had been using the same recipe for his baking for years. He said that after tasting the results of his homemade bread, “I knew I had to share it with the world.” It is true that many recipes call for all-purpose flour; however, all three of my recipes use whole-wheate flour rather than white. White flour is usually made from wheat that has not been treated with chemicals. All-white flour contains no gluten, which means it cannot hold together during baking and makes it difficult to roll out. Instead, white flan doughs are rolled out and baked in pans. Because of this, only white cookies and cakes are made with all whites. Although white cake mixes are sometimes labeled all–whites, these mixes contain no added sugar or artificial sweeteners. Most all –whities are low-fat and low carb. Low-carb and all -whiteness are two of four major ingredients of low carbohydrate breads. Since all non-gluten flour includes some gluten content, adding gluten-free flour to your recipe will increase the overall nutrition value of both the flour and the resulting bread. Gluten-Free Flour is also available as Glutino® brand flour in health food stores. See more information on gluten intolerance. Recipes using Gluto® flour are also readily available online. Many packaged flour brands now list the percentage of bristle, hull, or germ in order to distinguish between the wheat varieties. Look for “all-bran” flour labels. Note that some brands of “All-Wheat” or “100% allergen free” flakey flour contain wheat starch, not wheat germ. Wheat brash is the branic material remaining after the hulls and germ have been removed.
