I like to mix in a little bit of this, and a little bit of this to make cookies that are sweet, and almost chocolaty. I’ve tried the oatmeal cookie recipe and it’s really not a good cookie. These are a great deal easier to make, and don’t require many ingredients. The cookies are great for a healthy snack, or to have around the house for guests. Of course, I’m a fan of any type of chocolate. I’m thinking this would be fun to use in a chocolate oatmeal cookie cupcake for a dessert. The kids really like these, and I’ve been giving them away as treats to neighbors. What’s your favorite thing to add to your oatmeal?

Ingredients: 1 cup oatmeal (dry)
1 cup flour (white)
1/2 cup butter (melted)
2 cups quick or old fashioned oatmeal
1 cup sugar (brown)
2/3 cup oil (soft)
1/4 cup cocoa (milk)
3/4 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/4 tsp vanilla
2 eggs (large)
Decoration: 2 tbsp powdered sugar
Directions: mix oatmeal, flour, butter, sugar, oil, cocoa, baking soda, baking powder, salt, and vanilla in a bowl; mix well. Add eggs and beat well. Fold in the flour mixture just until smooth.
Bake on a parchment paper lined cookie sheet at 350° F for about 10-12 minutes. Let cool. Decorate cookies with powdered sugar. Makes: 24 cookies
