Brussels sprouts are one of my least favorite vegetables. I can’t get past the taste. I’ve tried all the ways of making them more palatable but nothing’s worked. Well, there’s a way to fix that.

Recipe for Brussel Sprouts

Prepare your ingredients. Cut a small hole in the stem of each brussel sprout, and drop into a small saucepan. Bring to a boil in salted water for 10 minutes. Drain and place in a large bowl. In a large skillet over medium heat, cook bacon until browned, about 5 minutes. Remove bacon with a slotted spoon and set aside. Add 1/4 cup of oil to the pan and increase heat to medium high. Add onions, and sauté until just tender, about 3 to 4 minutes. Add garlic and thyme, and cook for about 30 seconds, stirring constantly. Add potatoes and broccoli, and mix well. Add stock and bring to a boil. Return sprouts and bacon to pan, and mix well. Reduce heat to low, cover, and simmer for 5 minutes. Remove from heat and let stand covered for 5 minutes. Sprinkle with chopped parsley, and serve.
