If you want to store potato in plastic bag, do not submergings too much. You can also use a potato peeler to cut off the ends of potato. But this method is less effective. So I recommend you to buy potato tubers that are already peeled. Then you don’t need any additional steps. They are easy to peel.

You can also freeze potatoes until you are ready to use them; however, this is a bad idea because freezing potatoes will cause them to turn brown when thawed. Potatoes can become brown while frozen, so make sure to thaw them before using them again. Once you have peeled potatoes (or sliced them), store them whole in plastic bags in your refrigerator or freezer. Freeze them only if necessary.

You can keep the potatoes from absorbing the water by making sure the moisture is kept out of contact with the flesh. By making certain that the outer skin is well sealed, we prevent the inner portion of those potatoes being exposed even slightly to air. We do this by covering the pot with plastic wrap, placing the lid on top, sealing the plastic around the edges, adding a layer of foil over the top of all of that, securing the foil tightly around everything, again, ensuring that nothing sticks out. Then, after about 24hrs, remove the cover and allow the contents to sit undisturbed for another 24 hrs. After that time, add water to bring the total volume back to 1/2 cup. That‘s what we recommend. As for how long the rest of it sits, that depends on how much you want to eat. For example, I prefer to make a big batch of mashed potatoes and freeze them. I then thaw them out and eat them within a few days. But if I am going to freeze the whole batch, let it sit overnight. And if it takes me a couple of days to thawed it out, don“t worry about it. Just put it in my freezer. Or if frozen, defrost it right away. Either way, once you get to know how to handle potatoes, cooking them properly will save you a ton of money in terms of energy costs.
Can I freeze peeled potatoes?
Yes! You absolutely can freeze potatoes, even those that are cooked, although there is no need to do so. However, you should only freeze cooked potatoes (i.e., raw potatoes), as raw potatoe will cause a mushy mess. This water will dissolve the starch, making the potato soft and mushier. If you want to freeze potatoes that aren’t cooked properly, I recommend freezing them partially cooked. You can also freeze raw ones, since they’re already cooked enough to be frozen. Just remember to thaw them thoroughly before freezing. Once you’ve frozen your potatoes completely, store them in an airtight container in your freezer. They’ll keep for months without any need for refrigeration. When you’re ready to eat them again, simply reheat them until they reach the right consistency. Or, if they haven’t reached the proper consistency, just mash them with butter or cream cheese. But don’t worry about the water content; it will disappear once the potatoes are frozen solid. And when you finally decide to cook them—which is usually around 6 to 8 weeks after freezing—they’ll be ready for consumption.
