Cook on medium heat for 5 minutes with butter until meat is brown. Then reduce heat to medium-low and pour 1 cup hot chicken broth over meat. Cover and cook for 30 minutes or until meat is tender. Remove cover and reduce heat to low. Stir in 1/4 cup dried cranberries. Cover and cook for another 15 minutes or until cranberries are heated through. Serve with fresh mashed potatoes.

Mix the soba noodles with the egg and mix well. Mix the ingredients for the stuffing with the vegetables, soy sauce, and soba mixture. Mix well. Dip the pork roast in a bowl with soy sauce. Dip the pork roast in a bowl with soba mixture. Put the pork in the stuffing, and then place the stuffing in the gyoza wrappers, arranging it so that it resembles a person. Place the gyoza in an oiled pan and pan-fry for a few minutes on both sides. Serve hot. Enjoy!
