Can you roast in a cast iron pan?
Meat that needs a hot sear (like steak) but isn’t burned, such as roasting chicken, performs beautifully when cooked over a medium-high heat. As well, a roast that requires a browning step before cooking, say, in an oven, will benefit from a heavy-duty cast-iron skillet. Cast iron pans are oven safe, which means you don’t have any worries about the pan catching fire. On the other hand, cast irons are also dishwasher safe; you simply wipe out the skillet with paper towels after washing it. This is a great advantage, especially if using a large skillet, since you’ll have plenty of room to clean it afterward.

Should you cover beef with foil when roasting?
Tent the roasted meat with foil, let the meat stand until it reaches room temperature, remove the foil after 20 min., and carve the roasting meat into thin slices. Meat that has already been cooked will take longer to cook, so the time needed for carving should be no more than 20 mins. If you are going to serve the sliced meat immediately, you might want to consider using a meat thermometer to check the internal temperature of your meat. You can also use a probe to test the temperature inside the cavity of a roast. For this method, however, I recommend using the probe only when you need to know the exact temperature. Otherwise, there is no need for measuring the interior temperature; you do not need any additional equipment.

I used the same method as above, except I cooked the meats for 5 minutes at 180 C fan gas.
Why do you sear a roast before cooking?
When using a pan, sear the whole piece of meat before adding the vegetables and seasonings. This will ensure that the outside of all the pieces of steak are evenly browned. You can sear any kind of cut of beef, pork, lamb, or chicken. If you’re using chicken, do not sear it too long, since the skin will become tough and dry. For lamb or pork loin, cook it until the internal temperature reaches 160°F (71°C). If the cooking time is too short, there will be a tough, dry meat. To cook a roast, start by browning the exterior of every piece, including the bone, before searing the inside. Once the interior is brown, add the rest of ingredients and cook until done.
