I am well acquainted with cast iron skillets. Since moving back to Manhattan, this is the skillet I have used more than any other. I like the ability to throw whatever I’m making in this skillet onto a regular stove and know that it will be delicious and tender. One of my favorite things to cook in this skillet are ribeye steaks.

There are two ways to cook rib eye steak. The first is a stove top method, where you start with a cast iron skillet. To prepare the steak, season the steak with salt and pepper. Place the steak on top of the stove and sear it on all sides for about 3-4 minutes each side. Then add the steak to the cast iron skillet and cook it for about 10 minutes on each side. When it comes time to remove the steak from the skillet, flip it over and place the steak on top of the skillet, flat side down. Cook it for another 10-15 minutes.
