Many people think of them as being similar to beefsteak, however, Gitzards actually come from a different animal. This is the case because the Gizzle is actually a type of cow, not a beef variety. Beef is considered a member of this group, although it comes from cows that are not as large as the gizart. There are many types of Gizzy, all of which are different in appearance.
