I recently found some recipes for fajita veggies in a Crock Pot, and I have to say, they’re amazing. This is definitely a recipe that’s better when the veggies are sautéed in a pan with some olive oil, but if that’s not an option, the ingredients are pretty easy to put into a Crock Pot and done.
