This is because chicken thighs are very tender, which is why they cook up so fast. They are basically meat-stuffed in an egg and bread-based casing. In fact, overcook chicken thighs, and you’ll get a tough chicken, which is not very appetizing. Another problem with cooking chicken thighs in the slow cooker is the browning. This can be a bad thing. If you are browning the chicken thighs in the slow cooker, you’re making the meal more flavorless. You can make chicken thighs in a variety of flavors, but it really just depends on your palate. The chicken is going to be a little bit drier if you just use chicken breasts.
