Are beef ribs any good?
Beef ribs aren’t any better than any other kind of rib, especially if they’re cooked over a fire. They’re no better nor worse than other kinds of ribs, except for being a little bit tougher. And they don’t taste any much better either. But they do taste pretty good. If you want to avoid the bone, fat, cartilaginous bits, etc., then steer clear of beef backs. You’ll get a better taste and texture out of a steak. Just don‘t expect it to be as good as chicken backs or pork backs, which are far superior. There are some exceptions, though. For example, a nice rib roast is usually served with mashed potatoes and gravy, so there“s nothing wrong with that.
