I prefer to braise my beef rib steak in beef broth, rather than in water. This allows me to add a bit of flavor while cooking. If you are using water, you will need less liquid to achieve the same degree of tenderness. You can always add more liquid if needed. For tenderizing, I suggest using a meat thermometer to monitor the internal temperatures of your meat before cooking it. After cooking, check the temperature of both sides of any meat you don’t like. Any excess fat should be removed from the surface of all sides.

This means that the meat is less tender and less flavorful. And, since collagen is water soluble, overcooked meat will absorb water and become mushy. If you want to cook your meat to rare, do so at least 1 hour before you intend to serve it to guests. You can also cook it longer if desired.
