A croakneck is actually a smaller version of the eye, but it has a different shape. For this reason, it is often referred to as “round.” It is usually used for roasting because it cooks evenly and quickly. My roast chicken turns out hard, too. But I don’t think it tastes that bad. I’m not sure if it really changes the taste of meat, or if the cooking process is just too long. Either way, I would say that it isn’t a big deal. You can always cook longer if needed. 🙂 But if this is a problem, you might want to try a different roast. Some people swear by brisket, which is tougher than roast, though.
