Is pink in a burger OK?
An answer to “Yes, cooked burgers that are pink within the interior can cause problems” is “It’s unlikely that the internal temperatures of cooked hamburger patties would reach 160 degrees Fahrenheit.” Answer: No, I don’t believe that this is true. I think that there are many factors that can affect the cooking time of a burger, including the amount of fat content, moisture content (which affects the rate of cooking), and the presence of salt. However, if any of these factors are present, which I doubt, my recommendation would be to cook the burger until it reaches 160ºF internally. If you do want to make sure that your burger is safe, you should always cook it until the center of every patty is pink.
How can you tell if a burger is done without a thermometer?
If you go in sideways in front of your face, you’re going to get a medium-rare steak. You’ll get well-done if your hand is close to being touching your cheek. And if it gets too hot—it’s going past your mouth—you might get burned. But if this happens, don’t panic. Just let it cool down.
