1/4 cup granulated sugar
1/2 teaspoon ground mustard
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon celery salt
1/4 teaspoon ground turmeric
1/4 teaspoon cayenne pepper
1/2 cup all-purpose flour
1 1/2 cups buttermilk
1 1/2 cups water
2 pounds chicken thighs
1/2 cup apple cider vinegar
1 teaspoon garlic powder
1 tablespoon paprika
Preheat oven to 350 degrees F. Combine the salt, sugar, ground mustard, black pepper, onion powder, garlic powder, celery salt, turmeric, cayenne pepper and 1/4 cup water in a large bowl. Mix well to make a brine. Add the chicken to the brine. Seal the container with plastic wrap and place in the refrigerator overnight. Remove the chicken from the brine and rinse well under cold running water.
Mix together the flour, buttermilk, 1 cup of water and the garlic and paprika in a large bowl. Soak the chicken pieces in the mixture for 30 minutes. Arrange the chicken in a single layer on a large rimmed baking sheet lined with parchment paper. Pour the remaining 1/2 cup of water on top of the chicken pieces.
