Ghee is the best choice when cooking meat, poultry, fish, eggs, etc. at lower temperatures. Both oils are great for sautéing, roasts, grilling, broiling, baking (especially in ovens), and frying. They are also great additions to sauces, dips, dressings, spreads, marinades, gravies, soufflés, puddings and more.
