Have you ever wondered, how long does pork butt or pork belly need to be cooked before dinner time? I like to say that I enjoy an hour of prep on the weekend, then use my Instant Pot or Crock Pot for most of the rest of the cooking. When I do use my Instant Pot or Crock Pot, I know that I can come home to a hot meal. I just know I can! I like to pre-soak my woody-cut bbq or pork butt in ice water for about 2-3 hours. This helps the bbq or pork butt to come out tender and fall off the bone. I also like to pull the skin off of my pork butt because it helps to keep the meat moist. Make sure you cut up all the large bones and any bones that are longer than 3 inches from the ribs. I then season the pork butt with a little salt, pepper, garlic powder, and sage.

3.5 Hours Pork Butt

I was able to get this done in 3.5 hours on my instant pot. My meat took on the same temperature as the instant pot recipe (195 degrees). I also forgot to put the lid on, but I don’t think that it really harmed the cooking process. I left it to do another 3.5 hours on high pressure with the lid on, which took it to 207 degrees.

Then, add 1 tablespoon of olive oil to the instant pot and sauté the pork on medium heat for about 10 minutes. Then, add some sage and rosemary. Once you see that the meat is browned and cooked, add some white wine and cream to the pan. Then, let it cook for about 15 to 20 minutes. If you have some pan juices, you can add some of them to the instant pot too, but we would recommend you to drain the fat before adding the sauce. If you have some veal stock, you can add it to the pot.
