Ingredients
1 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
2 split chicken breasts
2 tablespoons canola oil
1 1/2 teaspoons minced fresh rosemary
2 tablespoons minced fresh parsley
1 1/2 teaspoons minced fresh thyme
1 teaspoon minced fresh sage
1 teaspoon brown sugar
½ teaspoon lemon zest
1 teaspoon dry mustard
½ teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon black pepper
Preheat oven to 425 degrees F.
Rinse chicken breasts. Toss with salt, pepper, paprika, garlic powder and onion powder in bowl; set aside.
In a large skillet over medium heat, heat canola oil. Cook chicken breasts for 8-10 minutes or until golden brown and cooked through, turning once. Remove chicken from skillet and place on a plate. Cover loosely with aluminum foil to keep warm.
In same skillet, combine rosemary, parsley, thyme, sage, brown sugar, lemon zest, dry mustard, cayenne, and salt and pepper. Cook and stir for about 1 minute, until herbs are fragrant. Remove from heat and pour herb mixture over chicken breasts.
Return to oven and bake for 8-12 minutes, or until chicken is cooked through. Transfer chicken to serving plates and top with herb mixture and a sprinkle of black pepper. Serve immediately.
