It also means you can throw them on the grill, rather than into the oven. I typically roast my shoulder quarters for about 20 minutes at 350, after I’ve rubbed them with garlic, salt, and pepper. Let them rest for 10 to 15 minutes before slicing.

Roasting Quarters at 350 Degrees

My recipe is for roasting whole quarts at 350 degrees. I chose this method because it turns out to be the most consistent. For one, you will have to hold your hands in the oven the entire time. I recommend to put your hands on the door. That way, if you forget to turn the oven off, you can always grab your hands out. For another, you will end up with a lot of sweat if you’re not careful. And, I find this method to be the most consistent. The more consistent method would be to preheat your oven to 350 degrees, and put the quarts in there for 12 hours. Should You Use a Meat Thermometer to Cook Leg Quarters?

Cooking with a meat thermometer is a great way to ensure that you are properly cooking your meat. The average thermometer should be inserted into the meat’s thickest part. If the temperature does not go up after 10 minutes, check the inside of the thermometer. Remove it and check again. If the temperature has not changed, remove it and cook your meat for a little longer. Cook until the temperature reaches 185 degrees F. Remove and let sit for 5 to 10 minutes before serving.

When to Roast Leg Quarters

According to the USDA, leg quarters need to be roasted for 35-50 minutes at 350°F (175-180°C). You can test the temperature of your oven with a digital probe thermometer to ensure that it is at the correct temperature. Cooking time is based on the thickness of the meat. How Long To Bake Leg Quarters

To achieve the best result, cook your leg quarters on the stove. Preheat your oven to 350 degrees Fahrenheit (177 degrees Celsius) and place the tri-tip on a wire rack. Allow the beef to cook for 15 minutes. Then flip the meat over and cook for another 15 minutes. Turn the meat once again and cook for another 15 minutes, or until the internal temperature of the meat reaches 160 degrees Fahrenheit (71 degrees Celsius).
