Why does corned beef take so long to cook?
Because corning beef requires a longer cook than a brisket. Brushing the meat prior to cooking helps to ensure that all the fat is rendered and there is no excess moisture. This is important because the longer the cook, less moisture is left in after the cooking process. There is also less chance for bacteria to grow. So, when you are cooking corns, make sure you brush the outside of your meat before cooking. If you do not, you will risk exposing the internal organs to bacteria. Also, if the inside of any of those organs is exposed to heat, this can cause the organ to rupture.

Corncob briskets are not delicate meats, therefore almost all methods of roasting will yield a delicious result when done properly. You need to know which method you want to use to determine how much fat to add to your cornco steak. If you are going to roast your briskit in broth, you will need enough fat for both sides. However, if this is what you plan to do, I would recommend using the fat left over from the last time you cooked your meat. This will allow you to make sure you have enough room to season your sauce correctly. For this reason, always choose the lowest temperature possible when cooking your steaks. When you get to high temperatures, your fat will melt and turn to water, which will cause the meat to dry out. So, don’t worry about the amount of fat you add.
