Artificial coloring materials are generally liquid or solid substances which mimic the appearance of real colored fruits or vegetables. Their purpose is primarily to enhance the attractiveness of fruits/vegetables. Many artificial colorants are available commercially. Most of them are based on natural materials. Thus, although they imitate the appearances of actual fruits & vegetables, their purpose isn’t to improve the taste of either. Rather, most of today’s artificial colourants tend to add a certain amount of color to our favorite fruits without adding any flavor. Therefore, while they might appear to increase the beauty of our fruits’ appearance, actually, only the artificial ones add flavor to them. Natural colorant is essential for enhancing the flavor of both the original fruit itself and the new additions. Hence, using natural products instead of artificial colours is the preferred method of coloring fruits nowadays.
