Many chefs believe that raw oysters can stay fresh for up 2 weeks when stored in their own juices, though others say that the longer the oyster is left out of its container, especially during the summer months, will result in less shelf life. Others say the shorter the time spent in storage, particularly during colder months such as winter, results in more rapid spoilage. And finally, some experts say even if the mushrooms are kept in cool conditions, there is no need to refrigerate them. They claim that this is because the enzymes in mushrooms break down starch and sugars in meat and vegetables, which would otherwise cause the flesh to become tough and dry. This is why many chefs recommend keeping mushrooms in cold storage containers. If you do decide to keep them in your fridge, make sure to store them uncovered.
