Do not cook the beef before removing it from pan. Remove it form the pan and let it rest for about 15 – 20 minutes before cooking. This will allow the juices to redistribute and the fat to brown. Once the desired donness is reached, remove the pork from pot and set aside. Do NOT add liquid to this recipe. You can use the same technique to braise meat, chicken, or fish. If you want to make a gravy, you should add the liquid after the meal is finished. Add enough liquid so the gravy thickens. Always add enough water to thin the sauce. For a sauce, add 1/2 cup of water per cup ingredients. To make gravy thicker, use more water. Use a heavy bottom pan to pour the mixture into a pan, which will hold the weight of all the ingredients without overflowing.
