You can also use a meat thermometer to ensure that the meat is cooked properly. If you don‘t want to use one (or you simply don’t have one), then place the roast in cold water for about 15 minutes before cooking. Then, remove the water and let the steak rest for 5 minutes. After resting, slice the beef across the grain.
