Why do beef ribs take so long to cook?
Because they are stored in fat, collagen, gelatin, etc. They also take much longer to heat up than other meats. For example, a steak takes about 20 minutes to get to medium rare, while a rib takes over 30 minutes. This is because the rib bone is actually a very dense piece of meat, so it takes a long time for it to absorb all the moisture and nutrients from the flesh. And this is why ribs are so tender when cooked. However, if the ribs were cooked at a lower temperature, say 160 degrees F, there would be no need for any additional cooking time. Instead, all those delicious aromas and flavors would come out during the cooking process.
