Cod omelettes: a traditional recipe with the flavor of Andalusia – Diario de Sevilla

Andalusia is a land that holds many gastronomic delightsamong them, the Cod fritters, an Andalusian snack recipe that, although it can be enjoyed at any time and season of the year, is typical of Lent and Holy Week. In addition to being a typical Andalusian recipe that everyone likes, it reminds many of us of our childhood, when our mother prepared this delicious recipe for us.

In today’s recipe we are going to teach you how to prepare cod tortillas, so you don’t have to leave home to enjoy this delicious traditional recipe with the flavor of Andalusia.

The ingredients that we will use to prepare this recipe will be for a total of six people, in case you want to invite a friend or family.


  • 400 g of cod crumbs
  • 200 g of wheat flour
  • Fresh parsley
  • 1 spring onion
  • 2 garlic cloves
  • 250 ml of water
  • 1 packet of saffron powder
  • EVOO (extra virgin olive oil)

Once we have the ingredients on the table to facilitate the preparation process, we will prepare the tortilla dough.

  • The first thing we have to do is take the fresh parsley, wash and chop fine. We will do the same with both garlic cloves and chives: we will chop them into small pieces we will incorporate everything in a bowl.
  • The next step will be to add the water and the saffron to the mixture of parsley, garlic and chives and remove it all good.
  • Now we will gradually add the flour to the prepared mixture, stirring very well with some rods so that there are no lumps.
  • When we have achieved the texture of a dense dough, we will add the cod crumbs to continue stirring. When we have the dough ready we will leave rest for 30 minutes.

Once we have our dough ready and the 30 minutes of rest have passed, we will begin to fry our cod omelettes:

  • we will heat oil enough in a frying pan to cover up to a little more than half of our tortillas (approximately two fingers of extra virgin olive oil).
  • When the oil is hot we will make small portions of our dough with a soup spoon and we will add them to the hot oil. We must be careful with the consistency of our dough and add more water if necessary, since we don’t want fritters, we want flattened tortillas. We will add all our tortillas little by little until they are done.
  • Finally, you we will remove the excess oil with kitchen paper and they will be ready to serve and taste.
