Giving thanks activates areas of our body that balance our immune system!
One of the ingredients of this delicious dish are onions. This unassuming vegetable is rich in vitamins, minerals, and phytonutrients. Its regular consumption can reduce the risk of developing diseases heart disease and prevent various types of cancer.
What are its benefits?
Digestion: Onions contain a type of fiber that acts as prebiotics, promoting the growth of good bacteria in the intestines, as long as you have a balanced microbiota.
heart health: Some research suggests that onions might lower blood pressure. Studies have found that onions help thin the blood, preventing blockages in the arteries. Quercetin, a phytochemical in onions, is highly beneficial in reducing the risk of heart disease by preventing cholesterol from being deposited in the coronary arteries.
cancer prevention: Quercetin prevents the growth of cancer cells. Some studies have shown that people who eat onion regularly are less likely to develop cancer of the esophagus, colon, breast, ovary, and kidney.
Try the red onions
The onions They come in all different shapes, sizes, and colors, but the varieties offer almost all of the same vitamins and minerals. However, red onions contain higher levels of quercetin, they are also richer in anthocyanins. Choose colored onions like yellow or red with small stems, which will stay fresh longer.
Trick. To make nutrient-dense raw onions even sweeter and easier to eat, serve them with vinegar or tart fruit.
Coconut Curry Chicken Meatball Soup
Ingredients
500 g of ground chicken, you can replace it with turkey or any ground meat
2 small fresh onions, chopped
2 cans of coconut milk, you can replace it with a can of coconut and a Greek yogurt
2 tablespoons of extra virgin olive oil
4 garlic cloves, minced
2 cups of broth
1 tablespoon minced or powdered fresh ginger
1 tablespoon yellow curry powder
Pepper
Salt
2 teaspoons tamari or coconut aminos
1/3 cup chopped fresh cilantro and/or parsley to taste
Ingredients
In a bowl, combine the chicken, 1 onion, 1 tablespoon of ginger, tamari, and a pinch of pepper. Put in your hands with a little oil and shape the meatballs the size of a tablespoon.
Add a little olive oil over medium heat in a medium saucepan. Add the meatballs and cook until golden brown, about 4-5 minutes, turning 2-3 times. Leave them on a plate.
In the same pot, add the curry powder, 1 onion, 1 tablespoon of ginger, and the garlic. Cook until fragrant, about 2 minutes. Add the broth and sweet potatoes. Cover and cook over medium heat until tender about 10-15 minutes. Add coconut milk and spinach.
Simmer, uncovered, another 5-10 minutes, until slightly thickened. Add meatballs back to pot. Add the coriander. Season with salt.
Divide the previously cooked rice into bowls and serve the soup and meatballs on top. Drizzle with chili oil. Serve with Naan on the side, this is optional.
