Recipe of Trunk of Christmas
Ingredients:
6 eggs
150 gr. Of flour
1 envelope of yeast (10 gr.)
150 gr. of sugar
150 gr. chocolate couverture
1 tablespoon of chocolate powder
1/2 l. milk cream
1 tablespoon strawberry jam
4 or 5 wafer sheets (to decorate)
Preparation:
Separate the whites from the yolks of the 6 eggs and, to make the Christmas log mass fluffy, beat the whites together with the sugar until stiff peaks are achieved.
Add the beaten egg yolks and mix carefully so that the mixture does not lose all the air that we have put into the whites. We booked.
Separately, mix the yeast and flour, and add to the previous preparation little by little (better if we sift it). Mix well until all the flour is perfectly integrated.
When the Christmas log cake dough has the right consistency, it is poured into a rectangular mold (about 50 cm long by 30 cm wide) previously covered with parchment paper (this being larger than the tray) and spread the dough evenly. .
The next step is to put it in the already hot oven for 20 minutes at 180 degrees Celsius.
Once cooked, wait for it to cool down a bit, turn the cake onto a damp cloth and remove the paper. He reserves.
Now prepare the Christmas log filling, mounting 300 grams of milk cream. Once the cream is ready, spread it over the cake with the help of a plastic spatula.
With the help of a damp cloth, roll the filled sponge cake over itself lengthwise, making sure it doesn’t break.
The ends are cut diagonally and the longest piece is placed on a tray or pretty platter, placing it in the center.
Heat the chocolate cover (in a water bath or microwave) until it melts and proceed to cover the trunk with it.
The other 100 grams of cream are beaten together with powdered chocolate (one tablespoon) so that it acquires a light brown color and with a pastry bag the ends of the cake are covered simulating veins in the wood.
With the rest of the cream and with a piping bag, make little piles imitating the snow around the Christmas log.
