If you ever need a quick and easy meal that is both healthy and delicious, then you need to make this rice. It’s really simple and you can use any rice you have on hand. This is a great staple to have in your pantry. So, start by washing your rice and putting it in a pan. Then add 2 tablespoons of vegetable oil and 1 cup of chicken broth. After a couple of minutes, you’ll want to add 1/4 cup of mexican rice. Cover with a lid and let it cook until it’s done. Once it’s cooked, add salt and pepper to taste and serve. This is a really good side dish for chicken, fish or vegetables.
