Although very popular in the United States, the carrot cake with frosting originated in England. As the story goes, housewives used sweet items (such as carrots) to naturally sweeten their sweets during World War II.
In English it is known as Carrot Cake and preparing it is much easier than you think. Check below what ingredients you need and follow the steps in this recipe.
Carrot cake recipe
Ingredients
For the cake:
- 3 cups of grated carrot
- 250 grams of flour
- 2 tsp. baking soda
- 1 pinch of salt
- 2 tbsp. ground cinnamon
- 300 thousand vegetable oil
- 400 gr. white or brown sugar
- 1 tsp. vanilla essence
- 4 eggs
- 100 gr. of chopped walnuts
For the glaze:
- 225 gr. cream cheese
- 140 gr. sugar flower
- 80 ml. heavy whipping cream
- 50 gr. of chopped walnuts

Preparation
In a bowl add the flour, baking soda, pinch of salt and cinnamon. Stir until dry ingredients are combined.
In a separate container add the oil, sugar, vanilla essence and eggs. Stir very well until everything is integrated into a paste.
Mix in the same container dry ingredients with wet ones. Do it in parts, so that they incorporate better. Add the grated carrots and walnuts To the mix. Stir.
Pour the mixture into two separate molds buttered and bake at 180°C for 40 minutes.
While the cupcakes are baking, prepare the frosting. For it beat cream cheese (which should be at room temperature) in a container. Go adding little by little sugar flower and finally the whipped cream. And ready you will get your glaze.
Once out of the oven wait for the cakes to cool to get them out of the mold. When they are at the right temperature it is time to assemble.
Add enough icing on one of the cakes and cover the entire surface. Place the second cake on top, press down slightly and add the rest of the frosting.
Add chopped nuts to decorate and voila, you can now serve your carrot cake.
